I seriously love baking – except for the whole “waiting” part. I’m far too impatient for instructions such as “allow to cool for ten minutes before incorporating into other ingredients”, and “leave overnight in the fridge to set”. I fully get that baking is supposed to be a relaxing pastime, but I can’t help just wanting to get it done. Plus, I am hopeless at keeping track of things in the oven which almost ALWAYS end up “crispier” than they’re supposed to be.
Cue the sound of angels singing when I discovered the most phenomenal toffee sauce that takes just 5 minutes to prepare on top of the stove. It is ideal for last-minute treats or get-togethers with friends when you don’t want to be chained to the stove while everyone is having a blast on the patio. Plus, it tastes even better the next day when scooping the leftovers out the jar with a spoon. Or so I’ve heard … *cough cough*
This recipe makes approximately 650mls and you can store the leftovers in the fridge. (I have absolutely no idea how long you can keep it – ours never lasts for more than a few days before being devoured!)
Best Ever Toffee Sauce
- 110 g butter
- 250 g light brown sugar
- 275 g golden syrup
- 225 ml double cream
- 1/2 tsp vanilla extract
1. Put all the ingredients in a saucepan set over a high heat and boil for approximately 4-5 minutes, stirring regularly, until it has thickened.
2. Serve warm over waffles or ice-cream..
